Unicode charictors

We have rapaied a database using 3rd party software
Doina acompare against a backup we have a varchar(max) colum. showing differnace
FOr example were seeing in the rapaired >
my wifes nephews & propertys upkeep
Then this in the good >
my wife’s nephews & property’s upkeep

I dont see this if i do Select via SQL studio i see this correctly

Any poiters on how to sort / where should i be looking for the gospel version?
