I can set the email and apply it to the template, I can change the email and apply it to the template but I cannot remove the email. I've decided for the purpose of this test I want emails in a few cases or none at all but I have no way of removing the email address for the whole template. I even tried putting a space in and seeing if it would let me apply that but it did not.

Sorry for the inconvenience. Yes, you cannot remove the email for the whole template if you have applied once.
We will try to include this in the final release. But for the time being, the work around is that you can remove it for each alert in the template.
