You may want to have a look at the following forum post which explains the items that can be configured in SQL Doc -

You should be able to create a project file and edit these options. Then when you generate the documentation again using the preconfigured project file you should have the document output as you desire. -
I did find this solution.
But still the code is in the html-files
And with a html-string tool you can extract all trigger knowledge !!!
And that is something we prefer to keep internally. -
I'll have to add your suggestion as a feature request and hopefully the developers will be able to implement this in the next release of SQL Doc. Although we do not have any time frame for this at the moment.

We would like to be able on selecting what we want to document.
We work quite often with student doing some try-outs and we give them a description of our tables. Foreign keys and defaults.
But i don't want to give them the code, the triggers, because there is a lot of work/research that we want to keep internally.
So selecting what we want to have in the final output would be great.
