I think this is annoying as well. I can't imagine why it's the default, as I've never seen brackets used by anyone except non-professionals who didn't know enough not to put spaces in the names.
Anyway, it's easy to turn off. Just bring up the SQL Prompt Options. Go to the 3rd tab, "Style". Under "Formatting" is a checkbox that says "Surround with brackets []". -

ROFL. If only everyone thought the same way you did our lives would have been sooooo much easier over the past 6 months.

I know it is technically correct, and actually required for spaces, but I like my Stored Procs to be in a nice visually easy to read layout. To me the brackets are distracting.
