How does RGDT (my abbreviation for Red Gate Dependency Tracker, which is way to long conversationally!) refresh itself, if it does at all? What if I go into a DB and change code? How do I trickle this back into my project file on the db?

Thanks for your feedback; that's a very fair question. SQL Dependency Tracker does support this function, however it has been disabled for the beta as we needed to fix some issues in other areas. There is a button on the toolbar, which is regrettably permanently disabled in the version you have, marked "Update from Schema", which will do exactly what you're asking for.
I can assure you that this will definitely be fully functional in the final release: unfortunately we just ran out of time in the run up to the beta, and after running through QA, didn't consider that the functionality was stable enough to warrant including at this point. I apologise for this, and again assure you that it will be available in the final release.

Is there a standard workaround to get this functionality short of completely recreating the project?

I'm sorry to say that at the moment that's your only option, although it will be working when the final release becomes available, which should be in around one month's time.
In the end we had to disable this function for the beta because it just wasn't working to our satisfaction, and we thought it would cause people a lot of unnecessary headaches. We've now largely fixed these issues and are currently retesting this functionality, but as I say, we just ran out of time to do this before the beta.
I can only apologise for this as I realise that recreating your project can certainly be a pain in the neck, especially if you've customised the colours of your objects and so forth.
