In this private build (http://download.red-gate.com/EAP/SQLPro ... .0.304.exe) wildcards shouldn't expand if SQL Prompt doesn't detect columns in one of the tables in the FROM clause. This will prevent the wildcard expanding in your example. I hope this is a suitable solution for you.
Regarding OPENQUERY - please could you add a request for identifying columns from OPENQUERY to our UserVoice page: https://redgate.uservoice.com/forums/94413-sql-prompt. We use it to help us decide what to work on next.

Column names should no longer be qualified inside their own table variable's definition. Please let me know if it works for you.

Thanks for reporting this issue. SQL Prompt shouldn't be qualifying column names for table variables.
We'll hopefully have a fix for this soon. Until then you can stop SQL Prompt attempting to qualify column names by unchecking SQL Prompt > Options > Inserted code > Qualification > Qualify column names with table name.

I've had a go at trying to format the INSERT the way you'd like it. I've created a style file for each of the options you sent. You can download them here: https://files.red-gate.com/link/ShKfBxtVuVEeTYjekzlUyR
If you extract the files to your styles folder (by default this is C:Users<user>AppDataLocalRed GateSQL Prompt 7StylesV2) they should appear in the formatting styles UI.
I'm anticipating that these styles will change the formatting of other statements which might not be what you want. Please let us know if that's the case.
