Well the Profiler provided no clues, so I broaden my investigation to any changes to other systems that were made on the day before the issue consistently started happening.
What I found was that a Veeam base backup was happening at that time and it has a VSS setting that causes SQL server to do a full backup of all non system databases and then a truncate of the logs to NUL. Details can be found at http://www.veeam.com/forums/viewtopic.php?f=2&t=2533

I'm currently using SQL Backup ver 6.4.0.56, and can't restore a compressed DB backup from SQL 2005 to 2000. This clearly conflicts with statement 1/, but I'm guessing I am missing or misunderstanding some information here. / comments
